Kyle Kilburg has finally found a home for his business, Torch Kitchen, at NewBo City Market.
Kyle and his brother, Kevin, had been looking to start a food truck business in the spring of 2020. When the pandemic began, those plans had to be "reformatted."
"As someone who enjoys food and community, I thought there was no better place to start my business than at the Market." Kyle explained.
Torch Kitchen opened at NewBo City Market on May 29, 2021, and business has already been booming, according to Kyle.
The restaurant's menu features sliders, fried dumplings, fries, and dipping sauces. These unique offerings are inspired by Kyle's passion for cooking and the bohemian lifestyle.
"I feel like a lot of people get caught up in 'theming' their establishment," Kyle said. "But sometimes you're just hungry, and you don't really know what you're hungry for so our menu is really eclectic."
